Summer has all but slipped away being replaced by cooler days and the subtle hues of autumn. Thankfully we don’t live in a country where we have a particularly cold autumn, our winters only really last 3 months, so there are still a few weeks of warm weather left to organize a get together with family & friends to enjoy this delicious dish under the trees with a glass of something cold.
Soups are a great way to pack wholesome meals on the go because they are generally easily transportable, and provided you have a means to warm them up (if they require warming up) you are good to go! Summer is on our doorstep in this part of the woods and I’ve been craving something inspired by the promise of warmer weather. This uber gourmet pizza promises to deliver that summer feeling with all of the fresh, seasonal ingredients as a topping.
I think the flavours of creme fraiche, smoked salmon and mint all mixed up gives this pizza some extra pizazza, and if you are consuming the odd glass of wine on your eating plan then I highly recommend enjoying this with a nice glass of crisp sauvignon blanc….
If there is one dish that I always look forward to eating in winter its oxtail stew. This dish was traditionally reserved for winter months growing up in our home because of its high fat content, but as it turns out if you are eating low carbohydrate high fat diet, and looking for fats to fill up on, this is a wonderful recipe to enjoy (I’ve been waiting my whole life for someone to tell me to dig in and enjoy a good helping of fat with my meals!).
